Describing the decoration, the patrons, and the organization of a café in Belleville (20th arrondissement) owned by the same family from Aveyron for the last fifty years, this article shows the characteristics of a Parisian bistro off the beaten tracks. Originally a bougnat before turning into a “snack bar” and finally, under the impulse of the second generation, this café is turned into a café-restaurant serving typical products from Aubrac: it has constantly adapted to the surrounding urban changes.
